Sam Adams Remastered and Original Side by Side Tasting

Were you curious about how the Boston Lager remastered stands up to the original? Well we were too, so we grabbed some of the original, and then some of the remastered when it was released, and we’re tasting, and looking at, them side by side.

When we were doing some research into the New Fat Tire for our side by side tasting video (view here), Mike ran across something that said Sam Adams had “remastered” Boston Lager. Of course, we were really worried after the result of our Fat Tire side by side tasting.

Referring to this PR Newswire article, the recipe itself hasn’t changed, Boston Beer Company was quoted as saying that they have “evolved the brewing process to reduce filtration by adding a traditional German practice of biological acidification, resulting in a brighter, easier-drinking beer.”

Our best guess is that they added a Acid rest to their mash schedule. You can read more about it here on BYO, but it lowers the PH of the mash and breaks down glucans. Typical temperature range for an acid rest is 95 – 113 degrees Fahrenheit. You can read a reference to the acid rest here on BYO.

As a side note, friend of the show Denny was at a beer event, and New Belgium was in attendance. Denny mentioned that he wasn’t keen on the new recipe for Fat Tire, and the representative said that they had been slowly changing the recipe for quite a while, and when they had it 90% changed, they changed the last 10% and rebranded it. Mike and Jesse aren’t buying it. The only way they think this can be true is if they were slowly replacing portions of the base malt, and then when they hit 90% they eliminated the specialty malts. In any case, we’re going to try and start brewing up some Fat Tire clone homebrew recipes, so keep a look out for those.
