You may recall a recent video where we fermented a 7.8% Imperial Blonde with the new White Labs Pure Pitch Next Generation. We were surprised that the one pack of yeast not only fermented this beer so well, but that it did so quickly. If you don’t remember, you can find that video here:

The beer came out really nice. Of course, being an imperial, it has a little more body. It’s basically just 2 row and Crystal 20, with cascade hops at 60 minutes, 15 minutes, and flame out. Fermented with California Ale yeast. OG of 1.070 and a FG of 1.012. It doesn’t taste like an almost 8% ABV.
It’s malty, slightly sweet, with a dryish finish. It has a grapefruit aroma and flavor, but it doesn’t drown out the malt.
